Portobello Steak with Sweet Mashed Potatoes & Grilled Veggies

Lots of people may think that vegan Thanksgiving dinner cannot be festive enough, which is far from the truth. With this Holliday we are foremost giving gratitude for the abundance of fruits and vegetables, so let’s bring this tradition to what it truly should be, a celebration of life.
This recipe is just one example of what you can prepare for your loved ones, but you can also choose a combination of other recipes as well. The internet is full of festive vegan recipes for every Holiday, plus I have a few you on my blog that you can add to this one as well. For example Master Chef Kebabs, Casserole Goodness, Butternut Bisque, Veggie Power, Guru Salad, Emperor Salad, and all the desserts.
I hope you will find my suggestions helpful and you enjoy the Thanksgiving to the fullest, but healthy and cruelty free. I will be spending this Holiday with my daughter and I will be posting photos from our vegan feast soon after. Make sure you come back to have a peak.
Portobello Magnifique

Prep time 15min Cooking time 30min Total 45min
Serves 4
Ingredients
Sweet Potatos 2 (peeled and cut into cubes)
Cauliflower ½ (florets)
Vegan butter ¼ cup (I use Earth Balance)
Water 2 cups (you may add more if need it)
Large Portobello mushrooms 4 (without the stems)
Zucchini 1 green (sliced into wedges)
Zucchini 1 yellow (sliced into slices )
Onion 1 large (sliced into rings)
Fresh basil to garnish
Garlic powder to taste
Black pepper to taste
Himalayan pink salt to taste
Oil
Process for the mashed potatoes
Bring water into the boil and add the sweet potato, cauliflower & salt.
Let it simmer under the lid for 20-30min.
When ready, drain the water through strainer.
Blend everything including the butter in the food processor until smooth.
Process for the Portobello with veggies
Place the mushrooms and veggies on a hot oil in a frying pan
Add the salt and pepper and grill on each side for few min until golden brown
Add the garlic powder at the end on both sides of the veggies.
