Spelt Casarecce Pasta with Sun Dried Tomato Sauce

Italian cuisine is undeniably very popular in North America and what I like about it the most is the fact that is very easy to make it vegan.   Lots of the Italian dishes are originally vegan anyway, especially the wide variety of delicious tomato sauces. So when you decide to prepare a vegan Italian meal, you can be sure that your family will be fully satisfied.

 

In this case I have chosen the Spelt Casarecce pasta not only because it is highly nutritious, but also because the shape gives quite a presentation to this simple dish. It truly has the look of a gourmet meal of an expensive Italian restaurant.  In addition to that, this pasta in combination with the savour tomato sauce is truly a treat that will make your day.

We get more lycopene (a potential heart disease and cancer fighting red pigment) per gram from cooked tomatoes compared toraw. It may also be important to add a little bit of fat to your meal when eating foods such as tomatoes to maximize the body’s absorption of fat-soluble phytonutrients. Supplements are not an effective source of these phytonutrients. Surprisingly, tomato juice actually has twice the antioxidant power of regularly consuming tomatoes and may have an anti-inflammatory effect, which may help athletes recover after exercise and reduce asthma. Tomato juice concentrate is also the highest source of potassium, which may help prevent the risk of stroke. Eating vegetables (including tomatoes) with every meal decreases the level of oxidation. Casarecce Bella Recipe

Recipe Type: Pasta

Prep time 20min cooking time 20min Total 40min

Serves 6 

Ingredients

 

 

Spelt Casarecce 500g (gluten free rice pasta if you prefer)

Fully ripe medium size tomatoes 10 or large 6(diced

Sun dried tomatoes 1 cup minced

Cooking oil of your choice(I use organic canola)

Garlic 4 cloves or 1 solo garlic ( minced )

Fresh basil 1 cup

Chilli pepper flakes (optional)   

Himalayan pink salt to taste

 

 

 

 

 

Process

 

 

Boil the pasta (follow the instruction on the package).

When ready, rinse under the cold water in a strainer.

Leave it in the strainer for 15 minutes for the water to drip out.

When ready, place it in the bowl and gently toss it with a ½ cup of oil and put it aside.

Sauté the sun dried tomatoes with garlic in a large frying pan on a few drops of oil until golden.

When ready add chilli peppers, diced tomatoes with salt and stir thoroughly.

Turn down the heat to low and let it steam under the lid for 20min.

When ready, heat up the pasta in a big frying pan on a high heat for few seconds and turn down the heat to low

 Heat up the sauce in a saucer for couple of minutes

Take off the heat and add diced basil

You may add more salt if need it

When ready, mix the pasta with the sauce  in a bowl, gently, but thoroughly

Serve garnished with diced basil and steam broccoli
