Chia Pudding with Layers of Fruits, Vegan - Gluten Free

One of the healthiest desserts out there is Chia pudding. It's truly amazing that you can have a dessert and feel good about it. I have tried few different flavours and the coconut-lemon seems to be my favorite. In addition to that, mango, raspberry and kiwi play their part in this mouth watering delight. Summer is on the way and this is definitely a treat that should be included in your outdoor parties menu this season. 

 

As you may already know, Chia is one of the popular super-foods today. Its health benefits are truly outstanding and it should be part of everyone’s diet.

 

Despite their tiny size, chia seeds are among the most nutritious foods on the planet. They are loaded with fiber, protein, Omega-3 fatty acids and various micronutrients. Interestingly… if you subtract the fiber, which may not end up as usable calories for the body, chia seeds only contain 101 calories per ounce.This makes them one of the world’s best sources of several important nutrients, calorie for calorie. Healthy Pleasure Recipe

Recipe type: Dessert 

Prep time 20min  Cooking time 0min  Total 20min 

Serves: 3

Ingredients

 

 

 

Light coconut milk 1 1/4  cup (I use Thai brand)

Chia 1/3 cup

Coconut flakes ¼ cup

Juice from one lemon

Maple syrup to taste

Mango diced

Kiwi sliced for garnish

Raspberries for garish

 

 

Process

 

 

  

Mix the coconut milk with chia, coconut flakes, lemon juice and maple syrup thoroughly in a bowl

Leave it in the refrigerator overnight or at least for few hours

When ready, fill one third of each glass with chia pudding

Add a layer of diced mango and again a layer of chia pudding

Garnish with slices of kiwi and  raspberries on top

At the end sprinkle with coconut flakes
