Spelt Penne with Light Rosee Sauce – Vegan

I love this time of year when market is flooded with produce locally grown in Ontario. I am really enjoying myself while shopping and planning the next delicious recipe.

 

Just recently I decided to create a popular Italian cuisine inspired penne with Rosee sauce because I got great deal on fresh tomatoes, baby marrow and basil. It turned out to be totally finger licking good, which is another proof that we don’t need dairy to make delicious traditional meals. I always loved spelt penne, which is also very healthy, so I’m using it in this recipe. However, if you do prefer gluten free pasta that is absolutely fine and the result will be equally successful. To substitute the traditional cream, I’m using blend of tofu and Tofutti cream cheese, which is not only cruelty free, but also very light and low in calories.

 

For those of us who are not allergic to gluten but are trying to eliminate as much as possible, spelt is one of the healthier options because is low in gluten, highly nutritious, usually organically grown and GMO free.

 

Spelt is one of the oldest cultivated crops in human history and is believed to have first been used between 7,000 and 8,000 years ago. Spelt is a a variety of grain or cereal that is closely related to wheat. In fact, spelt likely developed from a hybridization of emmer wheat and and wild goat-grass. It is closely related to normal “bread” wheat, but the popularity of bread wheat soon made spelt obsolete, which is why it is considered a “relic” crop. However, it is making a comeback as a health food, particularly in Spain, the United Kingdom, and other parts of Europe. It is actually packed with nutrients, vitamins, minerals, and essential organic compounds that other cereals and forms of wheat don’t contain, which might explain the renewed interest in spelt. Rosee Bellissimo Recipe

Serves 6 

Ingredients

 

 

Spelt Penne 500g (gluten free rice pasta if you prefer)

Fully ripe medium size tomatoes 10 (diced)

Tofu, medium soft ½ cup

Tofutti cream cheese ½ cup

Shiitake mushrooms 2 cups sliced

Baby Marrow 2 (or zucchini, sliced)

Cooking oil of your choice(I use organic canola)

Garlic 4 cloves or 1 solo garlic ( minced )

Fresh basil 1 cup

Chilli pepper flakes (optional)  

Black pepper (just a pinch for the mushrooms)

Himalayan pink salt to taste

 

 

 

Process

 

 

Boil the pasta (follow the instruction on the package).

When ready, rinse under the cold water in a strainer.

Leave it in the strainer for 15 minutes for the water to drip out.

When ready, place it in the bowl and gently toss it with a  1/4 cup of oil and put it aside.

Sauté the garlic in a large frying pan on a few drops of oil until golden.

When ready add chilli peppers, diced tomatoes with salt and stir thoroughly.

Turn down the heat to low and let it steam under the lid for 20min.  

In the mean time, blend the tofu with the cream cheese in a high power blender.

Add it to the tomatoes stir thoroughly and let it cool down for 15min.

When ready, blend everything in high power blender again. If your blender is not large enough then you have to do it in two or three stages.

Grill the mushrooms on high heat with a pinch of salt and pepper for few minutes until they turn golden on each side

Grill the marrow same way, but skip the pepper (you may add garlic powers if you like)

When ready, heat up the pasta in a big frying pan on a high heat for few seconds and turn down the heat to low

 Heat up the sauce in a saucer for couple of minutes

Take off the heat and add diced basil

You may add more salt if need it

When ready, mix the pasta with the sauce  in a bowl, gently, but thoroughly

Serve garnished with mushrooms, baby marrows and few basil leafs
