Summer Parfait with Peaches & Sunflower Seeds

Peaches are one of my favorite fruits and this time of year is their season here in Ontario. I am eating as much of them as possible, because when the season is over, their texture and taste is not the same. They are available all year round, but since they are transported from many miles away, they lose their natural juiciness.
I am quite happy to eat them just plain; nevertheless, I decided to make this light summery dessert. It turned out to be quite scrumptious and very easy to make. The great thing about it is that you can take it with you to go for as a snack if you have a small or medium sized mason jars. Much healthier than traditional yogurt, not to forget, cruelty free.
At last, I would like to share some information about peaches, since they’re not only delicious but also highly nutritious.
Wonderfully delicious peaches are low in calories (100 g just provide 39 calories), and contain no saturated fats. Nonetheless, they are packed with numerous health promoting compounds, minerals, and vitamins.
The total measured anti-oxidant strength (ORAC value) of 100 g peach fruit is 1814 TE (Trolex equivalents).
Fresh peaches are a moderate source of antioxidant, vitamin-C. Vitamin-C has anti-oxidant effects and is required for connective tissue synthesis inside the human body. Consumption of foods rich in vitamin C helps develop resistance against infectious agents, and help scavenges harmful free radicals. Read more
Peaches & Cream Recipe

Serves: 4
Ingredients
6 peaches sliced
Tofu, Sunrise medium firm
Tofutti plain vegan cream cheese
Juice from 1 lemon
6 Pitted Medjool Dates
Maple syrup (optional)
Sunflower seeds
Process
Blend the tofu, cream cheese with lemon juice and dates in high power blender.
It’s a good idea to put it in to refrigerator for couple of hours, but it’s not necessary.
When ready, start layering the peach slices in a circle up to ¼ of each glass.
Make sure you leave a small hole in the middle and fill it up with the sunflower seeds
Now you can add few drops of maple syrup if you like
When ready, pour ½ cup of cream
Add more peaches on top with about 2tbs of cream
Garnish with mint or basil leafs
