Raspberry Sorbet with Dragon Fruit & Pomegranate

Yes, Dragon Fruit can become easily an obsession and again, one without the guilt. I’m especially fond of the combination of raspberries and pomegranate with the dragon fruit. Juicy, crunchy and lightly sweet, will give you and your family a delightful experience on any occasion. Instead of buying unhealthy ice cream, you can keep the raspberry sorbet in a sealed container in your freezer. That way you will have it ready when need it.
Dragon Fruit Obsession Recipe

Ingredients
Dragon Fruit peeled and cut into cubes
Raspberries frozen 2cups
Banana 1 frozen fully ripe with brown spots
Light coconut milk 1 cup (I use Thai brand)
Maple Syrup to taste (optional)
Pomegranate ½ cup for garnish
Peppermint for garnish
Process
Blend the raspberries, banana and coconut milk in high power blender. If the texture is too thick to blend then you may add little bit more milk, just be careful not to make it too diluted.
You may add a little bit of Maple Syrup if you like, but I like it just naturally sweet. Just taste it before you decide to add some
When ready, fill the third of each glass or bowl of your choice
Top with dragon fruit
Sprinkle with pomegranate seeds and garnish with peppermint
It’s best to be eaten right away, otherwise the sorbet will melt. However, as I already mentioned, you can have it stored it in the freezer and the fruit separately in the refrigerator. Again, this is a one of my quick healthy and delicious desserts. Please let me now how you liked it.
