SHIITAKE A LA CHEF
Grilled Shiitake Mushrooms on Quinoa Pilaf Vegan, Gluten Free

Growing up in Slovakia, which was Czechoslovakia back then; mushrooms were a significant part of our diet. In addition to that, mushroom picking was a tradition and it is until today. It used to be so much fun to go in the woods with the whole family and friends and fill up our baskets with all types of edible mushrooms. My parents and grandparents knew which ones were safe, so everyone was picking only those without a doubt. Then we had delicious dinner in the evening and what was left my grandmothers dried and pickled for the winter season. It was quite different life compared to what I have today, but I always find fun ways to prepare mushrooms. Luckily here in Canada we have a wide selection of mushrooms, from which one of my favorite are Shiitake.
Shiitake mushrooms are in my opinion the most delicious, however the most expensive as well. This is why this meal is one of those you make when you wish to impress someone, for example your neighbors, boss or even mother in law. I would recommend serving it with the Guru or Emperor Salad to make even bigger impression, plus it will add to the overall nutritional value.
Shiitake a la Chef Recipe

Serves 4
Ingredients
Quinoa 3 cups cooked and cooled (follow the instructions on the packaging) I like to use a mixture of white and red or black
Shiitake mushrooms 2 cups sliced without the stems
Onion sliced into thicker slices appropriate for grilling
Garlic minced 4 cloves
Frozen Corn 1 cup (Organic)
Asparagus 1 bunch
Bragg sauce ½ cup
Black Pepper
Himalayan pink salt
Process
Begin with sautéing the Shiitake mushrooms on high heat with a pinch of salt and pepper for few minutes until they turn golden
When ready, remove them from the frying pan and grill the onions
When ready, add 3 cloves of minced garlic and frozen corn
Sauté for a minute and add the quinoa and Bragg sauce
Mix lightly, but thoroughly and take it off the heat
On separate frying pan beagin to grill the asparagus on the little bit of oil on high heat for couple of min
Add salt and turn down the heat to medium and cover the pan with a lid
Leave the asparagus grill for 5min and roll them over to the other side
Add rest of the minced garlic and grill them for another 5min
When ready, move them off the heat, but leave them covered until ready to serve
You can also grill them on a barbeque or just steam them with salt and garlic if you prefer
Serve the quinoa topped with the Shiitake mushrooms and asparagus to give the gourmet chef presentation
