Roasted Veggies with Grilled Tempeh

Root vegetables are extremely healthy and if they’re properly prepared they can be also very yummy. Roasting them in the oven I believe is one of the healthiest and flavorful ways. I especially love the combination of herbs, garlic and apple cider vinegar, because this combination helps to create a unique savory flavour.

 

In this recipe I’m using dry Oregano and Rosemary, however, if you’re growing your own herbs, you can use them fresh, plus you can also add Sage and Thyme. I did that long time ago when I had garden, but right now I do not so I just used what I had at home. In some recipes I like to give options if I have them tested and I know the results is favorable. I also like to encourage you to experiment and to be creative. So go ahead and see what you can come up with.

 

Now I like to go back to the health benefits of root vegetables, since they truly deserve our attention.

 

Root vegetables are exactly what the name implies - they are the root of the plant. The most common root vegetables have become family staples: potatoes, sweet potatoes, carrots, onions, garlic, and beets. High in vitamins and minerals that they absorb from the ground, root vegetables are full of nutrients and are an excellent source of fiber. Many are high in vitamin C, B vitamins, and vitamin A. Casserole Goodness Recipe

Recipe Type: Main meal

Prep time 20min  Cooking time 55min  Total  1hr 15min 

Serves 6

Ingredients

 

 

Carrots 4 (cut into wedges)

Parsley  root 3 (cut into wedges)

Potatoes pink 4 medium (cut into cubes with skin)

Yam 1(cut into cubes)

Leak 2 (cut into wedges)

Brussels sprouts 2 cups (cut in halves)

Garlic 4 cloves or 1 solo garlic diced

Oregano 1tbs

Rosemary 1bs

Black pepper to taste

Olive oil ½ cup

Apple cider vinegar ½ cup

Maple syrup ½ cup

Himalayan pink salt to taste

 

 

Process

 

 

Mix everything thoroughly in a large bowl (you can add more oil if needed)

Preheat the oven to 350F

It is best to use a 2 medium size Casserole dishes with lid

Fill up the Casserole dishes, cover with the lid and place them into oven for 45min

When ready, take the lids off and roast the veggies for 10min longer until they golden  

Serve with grilled Tempeh  

Grilled Tempeh Recipe

Seves 6 

 

 

Ingredients

 

 

Tempeh 2 packages 240g each

Barbeque Sauce (Master Chef Kebabs recipe)

 

 

 

Process

 

 

Preheat the oven to 400F and place the Tempeh in on a baking sheet for 20min (it is a good idea to use wax paper as well)

When ready, set the oven for grilling for another 5 min

Spread some more barbeque sauce on top at the end
