SUMMER PITA
Grilled Veggies on Pita with Pesto

Just because it is winter, it doesn’t mean we cannot do some grilling. You can do it on a frying pan or on electric mini grill in your kitchen. Basil is little bit pricy at this time of year, so this is why I usually make lots of pesto at summertime and always have some in a freezer. This is a great idea especially for people who have their own gardens.
Summer Pita

INGREDIENTS
• Fresh Basil 2 cups (only leaves, fine stems are okay too)
• Fresh Pine Nuts 1cup
• Organic virgin Olive Oil 1 cup
• Garlic 4 cloves
• Himalayan pink salt to taste

Blend everything in a high power blender or food processor.

FOR PITA
• 6 pitas cut in half and lightly toasted in a toaster
• Zucchini sliced
• Red pepper 1cut into wedges
• Yellow pepper 1cut into wedges
• Onion 1 cut into rings
• Portobello mushrooms 1 sliced
• Oil of your choice
• Himalayan pink salt to taste
• Pepper to taste

Grill veggies on a grill on frying pan with few drops of oil. You will need little bit more if you doing it on a frying pan.
Spread pesto on each half and apply your veggies.
