MEDITERRANEAN DELIGHT

It’s been a very long time since I had a Greek salad that I used to love, so I decided to make a new veganized version with Cashew Cheese. It turned out absolutely delicious and in my opinion very much like the traditional version. But of course super healthy because besides being plant based it is also oil free. Well there is oil in cashew nuts, but that is raw unprocessed oil, which is actually good for us.
Mediterranean Delight

INGREDIENTS

DRESSING
• Cashew 1 cup soaked for 6 hours
• Apple cider vinegar ¼ cup
• Garlic powder 2tsp
• Himalayan pink salt to taste
• Water ¼ cup (you can add more if needed)

Blend everything in a high power blender.
​
SALAD
• Organic Romaine lettuce (1 or 2, depending on size)
• 1 Cucumber
• Campari Tomatoes 8
• ½ cup Olives
• Scallions
• 2 tsp Oregano dry
​
Pour the dressing on top of your salad and sprinkle with oregano.
