Traditional Apple Strudel with Poppy Seeds

I have never been a pastry expert and since I am vegan my interest for it is even less than it used to be. Lately I like to focus more on raw deserts then baked, but I had to make an exception do to my daughter’s request for this past Thanksgiving. We agreed that we’re going to follow our family tradition and make our Canadian Thanksgiving slightly European, not to mention vegan.
As a traditional European pastry, strudel was always very popular and I did make it quite often back home in Slovakia.However, I never made it from the scratch, only my grandmother was able to do that. Of course, you can try if you like by following Sasa Woodruff blogs. I always bought premade dough and even this time I was lucky to find a plant based one in Whole Foods frozen section.
So it is up to you which approach you prefer. Either way, I wish you success, because strudel is truly a treat especially when baked at home. It is never the same sold in the store which is not vegan anyway. I would be very surprised to find one that is vegan. Maybe someday.
I also suggest that you get someone to help you. For me it was a family project with my two daughters and I’m glad that we did it. It turned out very successful.
Holiday Strudel Recipe

Ingredients for the dough from Sasa Woodruff blogs (you can also buy the dough
premade in Whole foods)
3 2/3 cups (500 grams) bread flour
1 cup (250 ml) warm water
1 tablespoon oil
1 tablespoon white vinegar
1/4 tsp salt
For the filling
Apples 1kg pealed shredded and well drained
Poppy seeds grinded 1 cup (you can buy them in a can just make sure they’re dairy free)
Coconut sugar or xylitol (to taste)
Cinnamon (to taste)
Coconut oil melted ½ cup (you may ad more if need it)
Process
Spread small amount of flour on the table and start roiling the dough from the center towards the edges until very tin and large about 2’ diameter
When ready, add a layer of poppy seeds about 2” of the edge and also sprinkle with sugar if you making them form the scratch. If from the can they’re usually sweet.
On top, spread the apples (makes sure all the juice is drained ), about 2” of the edge as well

With a brush, spread the coconut oil thoroughly around the edges and start carefully roiling the dough with the filling, not too tight but not to lose.
When ready, fold the ends tightly so the filling will not escape trough the baking process
Add more oil on top and the edges
Have your baking sheet lined with wax paper and quickly but gently slide the strudel on the sheet.
Preheat your oven to 350F and bake for 40 to 50min.
When ready, wait at least 20 min to cool it down.
