Veganized Caesar Salad with Pine Nuts

This is another veganized alternative for a Caesar Salad, much simpler and quicker than my other recipe, the Emperor Salad. However, this one does not require as much work or time and it is equally delicious. The two portions are quite large and could easily make four, but I like to eat the big portion myself and I believe you may too. If you are really hungry, or you have a party, then it goes well with my Master Chefs Kebabs and the Cheese Bites. All these recipes are great for barbeque parties, so give it a try and enjoy the summer.
I also would like to mention that if you don’t have the pine nuts, you can use shaved almonds instead. They are both highly nutritious and tasty, nevertheless, this time I would like to give you an additional information about the pine nuts, which I really love. I know they can be quite pricy, but if you live in US or Canada, then Costco is the place to buy them for a reasonable price.
Pine nuts have been enjoyed since ancient times. Roman soldiers ate them and they’ve been mentioned by Greek authors as early as 300 BC.1 Nutritionally speaking, pine nuts contain many of the same healthy nutrients as other nuts, including healthy monounsaturated fats and antioxidants… but pine nuts are not actually nuts at all.
Pine nuts are the seeds of pine trees. You’ll find them between the scales of pine cones, but while all pine trees yield pine nuts, only about 20 species have pine nuts large enough to be worth eating.
Once harvested from the cone, pine nuts must be shelled, and they should be consumed shortly after. Unshelled pine nuts are prone to rancidity due to their high oil content (so be sure to store them in your fridge. Read more
Classic Caesar Recipe

Ingredients
Romaine lettuce 1 large or two small cut into 1” long pieces
Pine nuts ¼ cup
For the dressing
Vegenaise or Just Mayo ½ cup (vegan mayonnaise)
Juice form 1 lemon
Nutritional yeast 1tbs
Dry minced garlic or powder
Organic mustard 1tsp
Himalayan pink salt to taste
Black Pepper to taste
Mix all the ingredients in the bowl possibly with whisk
Salad
When ready, place the lettuce in the bowl and toss lightly with the dressing
Serve topped with pine nuts
