Refreshing Blueberry Yogurt

After I made the Peach Parfait, I have decided to make another yogurt dessert/snack. This time however, I am using the soft tofu just so I can see the difference. It turns out that the parfait is more like a cheesecake and the Blueberry Sweetenss is more like a yogurt but they are both delicious, guilt free snacks/desserts for the hot summer time, full of nutrients, high in protein and calcium.
In terms of U.S. fruit consumption, blueberries rank only second to strawberries in popularity of berries. Blueberries are not only popular, but also repeatedly ranked in the U.S. diet as having one of the highest antioxidant capacities among all fruits, vegetables, spices and seasonings. Antioxidants are essential to optimizing health by helping to combat the free radicals that can damage cellular structures as well as DNA. We recommend enjoying raw blueberries — rather than relying upon blueberries incorporated into baked desserts — because, like other fruits, raw blueberries provide you with the best flavor and the greatest nutritional benefits.
As one of the few fruits native to North America, blueberries have been enjoyed by Native Americans for hundreds of years. Blueberry Sweetness

Serves: 2
Ingredients
Frozen blueberries 1cup
Soft tofu organic or GMO free
Tofutti plain cream cheese
Juice from 1 lemon
6 Pitted Medjool Dates
Maple syrup or sweetener of your choice (optional)
Fresh blueberries for garnish 1cup
Shaved almonds for garnish
Process
Blend the tofu, cream cheese, blueberries, lemon juice, dates and sweetener in high power blender.
When ready, fill up your bowls or glasses and garnish with fresh blueberries and almonds
It’s a good idea to put it in to refrigerator for couple of hours, but it’s not necessary.
