Pineapple & Kiwi Salad with Coconut Whipped Cream

There is no easier way to make heavenly desserts than fruits with coconut whipped cream. So if you have not tried coconut whipped cream yet, then now is the time. Having a can of organic coconut milk in a refrigerator is a very good idea and it should become a habit for every household from now on. Whether for your children or unexpected guests, you can whip yummy delights in a matter of few minutes.
The Pineapple Express is just one example of how to make an express dessert that will satisfy any fussy eater. You can also combine some of my other recipes with coconut whipped cream, such as
Juicy Fruit & Tropical Paradise. Nevertheless, I am sure you will come up with your own delightful versions as well.

Fresh pineapple is low in calories. Nonetheless, it is a storehouse for several unique health promoting compounds, minerals and vitamins that are essential for optimum health.

100 g fruit provides just about 50 calories equivalent to that of apples. Its flesh contains no saturated fats or cholesterol; however, it is rich source of soluble and insoluble dietary fiber like pectin.

Pineapple fruit contains a proteolytic enzyme bromelain that digests food by breaking down protein. Bromelain also has anti-inflammatory, anti-clotting and anti-cancer properties. Studies have shown that consumption of pineapple regularly helps fight against arthritis, indigestion and worm infestation.

Fresh pineapple is an excellent source of antioxidant vitamin; vitamin C. 100 g fruit contains 47.8 or 80% of this vitamin. Vitamin C is required for the collagen synthesis in the body. Collagen is the main structural protein in the body required for maintaining the integrity of blood vessels, skin, organs, and bones. Regular consumption of foods rich in vitamin C helps the body protect from scurvy; develop resistance against infectious agents (boosts immunity) and scavenge harmful, pro-inflammatory free radicals from the body.

It also contains small amount Vitamin A (provides 58 IU per 100 g) and beta-carotene levels. These compounds are known to have antioxidant properties. Vitamin A is also required maintaining healthy mucusa, skin and is essential for vision. Studies suggests that consumption of natural fruits rich in flavonoids helps the human body to protect from lung and oral cavity cancers.

In addition, ananas fruit is rich in B-complex group of vitamins like folates, thiamin, pyridoxine, riboflavin and minerals like copper, manganese and potassium. Potassium is an important component of cell and body fluids, helps controlling heart rate and blood pressure. Copper is a helpful cofactor for red blood cell synthesis. Pineapple Express Recipe

Prep time 20min Cooking time 0min Total 20min
Serves 4
Ingredients for the salad
Pineapple cut into cubes
Kiwi fruit 2 slices
Pomegranate seeds ½ cup
Gently toss the fruits in a large bowl
For the whip cream
Fat Organic Coconut Milk 1 can (I use Thai)
Powdered sugar 1tbs
Vanilla powder 1tsp
You can also make the whipped cream from fresh coconut, by following this recipe:

Process
Chill the coconut milk, (best leave it in refrigerator over night)
In a bowl whip the milk with electric whisk while adding the sugar & Vanilla
When ready, place the bowl in refrigerator until you ready to serve it
To serve, fill glasses of your choice with the fruit salad
It is nice to create a layer of kiwi fruit first & then add the pineapple
Do your best to spread the pomegranate in between
At last, using a big spoon add the whip cream and garnish with few pomegranate seeds
