Gyros Inspired Meatless Wrap With Vegan Tzatziki

Last week I realized that it has been few years since I ate Greek food with Tzatziky sauce. I don’t even remember how long exactly, all I know that I used to enjoy it. I had some wraps and mock meat, which led me to an idea to make vegan Gyros. I did look it up the traditional recipe online first, just to get the basic idea and I was very happy to discover that I have most of the ingredients, except vegan yogurt. Well, that didn’t stop me from going ahead with my experiment, because I felt that I can improvise with what I have.

 

And voila, it turned out super delicious. I don’t know for sure if it tastes exactly like the traditional Tzatziki, because it’s been so long, all I can say that I love it. Maybe you can let me know, if you get a chance to compare.

 

 

Mediterranean Wrap Recipe

Serves 4

Ingredients

 

 

Mock meat of your choice (I use Nelakee)

Ancient grain wraps 4

Lettuce (Romaine or mix greens)

Campari tomatoes 4 sliced

Cucumber sliced

Sweet onion sliced (optional) 

Oregano dry  

Garlic powder

Oil few drops for frying the mock meat

 

 

 

For the Tzatziki

 

Fat coconut milk ¼ cup

Vegenaise ¼ cup

Organic tofu medium firm (1/4 package 90gr)

Cucumber ½ cup finely minced

Garlic 2 cloves minced

Chives or scallions 1tbs (only the green part)

Italian parsley 1bs minced

Lemon juice from 1 lemon

Apple cider vinegar 1tbs 

Oregano dry 1tbs

Black pepper to taste

Himalayan pink salt to taste

 

Blend all the ingredients in the blender except cucumber, parsley, chives and oregano.

When ready, pour the mix in a medium size bowlAdd the rest of the ingredients and mix thoroughly with spoon

 

 

 

Process for the wraps

 

 

Heat up few drops of oil on a frying pan.

If some of the pieces of the mock meat are too large, you may cur them in half.

Fry lightly on each side.

When ready, turn down the heat and add oregano with garlic powder.

You may add pinch odd salt if you like.

Place your lettuce on each wrap with the meat and veggies on top.

Drizzle with the Tzatziki and wrapped all tightly with one side folded in and one open.

You may secure your wraps with tinfoil on the folded side.
