GOLDEN QUINOA BOWL

Quinoa with Roasted Beets & Leek

Vegan – Gluten Free

Posted on January 06th, 2016

At summertime, I like to eat cold quinoa salads but at winter time I prefer warm quinoa meals. This recipe is an example of one of those highly nutritious winter meals that I love. You may enjoy it just by itself, or you may try different combinations with some of your other favorite vegan meals. I usually like to eat it with grilled tempeh and my veganized Caesar salad.

Quinoa & beets are both super foods, which I am sure you already know, but I still like to give you some additional information about those spectacular beets. You can read about quinoa from my Bowl of Joy  recipe if you wish.

Golden or yellow beets are heart healthy, excellent kidney and body cleansers, high in powerful antioxidants, lowers blood pressure, lowers cholesterol, treats anemia and fatigue, and more. They decrease the risk of heart disease and helps in the prevention of various cancers, and are also good for eyes and skin.

Good news – all types of beets are high in many vitamins and minerals. While Golden beets contain good amounts of fiber, iron, potassium, and folic acid, many orange and yellow color fruits and vegetables are packed with nutrients including such vitamins and minerals as vitamin C, vitamin A, beta-carotene, potassium, lycopene, flavonoids, and zeaxanthin. Along with vitamins, fiber, and phytonutrients, there is also an abundance of antioxidants in orange color foods. Eat up! Read more

Golden Quinoa Bowl Recipe

Author: Lena Novak - Lena's Vegan Living

Recipe type: Superfood dish

Prep time 15min Cooking time 40min Total 55min

Serves 4

Ingredients

Quinoa 1 1/2 cup white ½ cup red or black

Golden Beets 3peeled & sliced

Leek 3sliced

Dressing

Oil ½ cup (organic canola or grape seed) Or low sodium organic vegetable stock

Apple cider vinegar ½ cup or juice from 2 lemons

Garlic 4 cloves minced

Maple syrup ½ cup

Himalayan pink salt to taste

Black pepper to taste

Blend everything in the bowl, possibly with the whisk

Process

Boil the quinoa and let it cool down (follow the instruction on the package)

Mix the veggies with the dressing in the casserole dish

Preheat the oven to 400F

Place the casserole dish in for 30min (covered with lid)

When ready, remove the lid and bake for 10 more min

The cooking time may differ, so you need to keep checking with fork if the beets are soft and ready after 30 min. If not then you have to roast them few minutes longer, but make sure you don’t overcook them.

At the end you can set the oven just for couple of minutes on grilling if you like.

Just be careful not to burn them.

When ready, remove it from the oven and let it cool down for few minutes.

At the end, mix everything gently but thoroughly in a larger bowl.

I hope you will try this delicious and nutritious meal. Make sure you share your experience. I am looking forward to read your comments.
