Quinoa Salad with Arugula - Vegan, Gluten Free

I absolutely love quinoa, but who doesn’t? It's unique taste and texture is a fantastic addition to vegan cuisine. This recipe is just an example of a simple and tasty way to prepare a healthy vegan meal. I like to use the mix of white and red quinoa, which adds an eye pleasing presentation to the bowl.
This recipe is just one of many options, and you don’t have to follow it exactly. Just make sure you always have quinoa at home, so it is there for you anytime you need it. Sometimes you can just throw together whatever is left in the fridge. For example peppers, spinach, mushrooms, reddish or celery. Be creative and see what you can come up with. I will be adding more quinoa recipes as well, so you’re welcome to come back for more ideas.
In addition to that, Arugula is a one of my favorite greens and I use it allot in my recipes. It is extremely nutritious with a unique delightful flavour, great for salads and smoothies.

Arugula is a member of the brassica family of vegetables ca lled cruciferous – this group is known for its nutritional powerhouses broccoli, kale and cabbage. This family of vegetables is high in fibre and antioxidants, but they’re also rich in compounds known as glucosinolates, which studies show may reduce the risk of developing lung, colorectal, breast, prostate, and pancreatic cancer. Quinoa Delight Recipe

Recipe type: Salad
Prep time 15min Cooking time 10min Total 25min
Serves 4
Ingredients
Quinoa 3 cups coked
Carrots 2 medium
Scallions 3
Arugula 1 cup
Frozen Corn 1 cup (Organic)
Green Peas 1 cup
Dressing
Sesame seeds oil 1tbs
Juice from 2 lemons
Maple syrup ¼ cup
Himalayan Pink Salt to your taste
Mix everything thoroughly, possibly with whisk
Process
Boil the quinoa and let it cool down (follow the instruction on the package)
Slice the carrots and steam for few minutes then let it cool down
Steam the corn and peas for few minutes and let it cool down
When ready, mix everything together with the dressing
At the end, gently mix in arugula and diced scallions
