Chocolate Mousse Cake

Vegan - Gluten Free

I moved couple of times since 2012 and in the process I misplaced my cake form which I realized when I had everything ready to make this new delicious mousse cake. I was debating whether I should publish these photos or make another cake when I get the new cake form, however, I feel the way I did it is quite innovating, so I thought that I will share it with you. The cake was little bit messy, but the taste made up for it. It is absolutely to die for. I will make it again in the proper form and I will post those photos as well, but in the meantime this is what I came up with and I hope you will like it.

 

In addition to that, this dessert is not only mouth watering but also healthy, as you can tell from the ingredients.  It is gluten free, low in fat, low in calories, high in protein and refined sugar free. Nonetheless, it will satisfy even the most demanding sweet tooth cravings without the guilt.

Dark chocolate is loaded with nutrients that can positively affect your health.Made from the seed of the cocoa tree, it is one of the best sources of antioxidants on the planet.Studies show that dark chocolate (not the sugary crap) can improve health and lower the risk of heart disease.

If you buy quality dark chocolate with a high cocoa content, then it is actually quite nutritious.

It contains a decent amount of soluble fiber and is loaded with minerals.

A 100 gram bar of dark chocolate with 70-85% cocoa contains (1):

 

  • 11 grams of fiber.

  • 67% of the RDA for Iron.

  • 58% of the RDA for Magnesium.

  • 89% of the RDA for Copper.

  • 98% of the RDA for Manganese.

  • It also has plenty of potassium, phosphorus, zinc and selenium. Read more

Chocolate Mousse Cake Recipe

Serves 6

Ingredients 

 

 

For the mousse

 

Medium firm tofu organic or GMO free

Tofutti cream cheese

Cacao powder ¼ cup

10 pitted Medjool Dates

 

For the crust

 

Oats ½ cup

3 pitted Medjool Dates

Shaved almonds ½ cup

Maple syrup 2tbs

Cold press Coconut oil 2tbs

 

For the coating

 

Vegan dark chocolate chips ½ cup

Maple syrup 2tbs

 

 

 

Process

 

In a food processor blend all the ingredients for the mouse until smooth

Transfer it to a bowl and store it in the refrigerator until  you need it

Again in a food processor, chop all the ingredients for the crust by using the pulse button

If you don’t have a proper cake form, then use a medium size pot or casserole dish lined up with plastic wrap to prevent the cake from sticking

When ready, transfer the mix from the food processor into the dish and start pressing down with plastic spoon or fingers creating a flat circle

When ready, start melting the chocolate chips in a small pot over steaming water on medium heat while adding the maple syrup and stirring with a whisk until smooth

When ready, transfer the mouse from the fridge in to the ready dish and spread around evenly

For the final step, use a table spoon to pour the chocolate in a spiral

It doesn’t have to be perfect and you can also take the whisk and make slight spiral grove for the gourmet effect

When ready, store it in a freezer over night

The next day transfer it to a refrigerator  for couple of hours to defrost 

To serve you may cut in the dish or carefully pull it out with the plastic and place it on a  platter and cut the plastic around with scissors

Serve coated with more melted chocolate and sprinkled with almonds
