Tofu in Spicy Curry Sauce with Spinach

If you love spicy curry dishes then this one is definitely for you, even though it doesn’t have to be spicy. For those who do not like it, or if you have children then do not add the chili peppers. It is delicious even without it, but I personally love it slightly spicy. The main thing is that it is very light, highly nutritious, plus quick and easy.
Even though I usually prefer to serve curry with the traditional Indian long grain white basmati rice, you can try another type of rice if you wish. Besides the white basmati, it may go well with red rice, which is not only delicious but also very healthy. I may actual try it myself next time I will make this meal again.

Curry Powder is a popular spice mix that has a number of valuable health benefits, including the prevention of cancer, protection against heart disease, reduce Alzheimer’s disease symptoms, ease pain and inflammation, boost bone health, protect the immune system from bacterial infections, and increase the liver’s ability to remove toxins from the body.
Curry powder is made up of numerous ingredients, and depending on the region of the world, they can change slightly, which can also alter the specific health benefits that may be derived from the powder. The most common and advantageous ingredients of curry powder are turmeric, coriander, cardamom, cumin, sweet basil, and red pepper. Some other ingredients that are occasionally added, depending on the specific recipe, are fennel seeds, ginger, garlic, cinnamon, or mustard seeds, all of which have individual health benefits. Spicy Desire Recipe

Serves 2
Ingredients
Organic Firm Tofu 350gr (sliced0
Organic baby spinach 2cups
Garlic 4 cloves (minced)
Curry Spice 1/4 cup
Dry chili pepper flakes (optional)
Minced dry garlic just a pinch
Bragg Sauce or low sodium Tamari 1/4 cup
Scallions for garnish
Oil
Water 1 cup (you may add more if need it)
Process
Preheat the oil and start sautéing the tofu on high heat
After few minutes, add the Bragg sauce and garlic
Sauté for few minutes until golden brown
You may also add the chillies if you like spicy
When ready, add the curry and water
Gently toss the tofu with the curry and water until all blends in
When ready, turn off the heat, add the spinach and cover the pan with lid for 5 minutes
You may add little bit more water of need it
After 5 minutes toss everything gently again so everything blends in nicely
Serve with rice of your choice and garnish with scallions
