TOFU DELICATES

Scrambled Tofu with Shiitake Mushrooms

I was very lucky getting good deals on Shiitake mushrooms in the last couple of weeks, so I made another recipe.  Of course there is nothing new about scrambled tofu, but I just added my little twist to it. Scrambled eggs with fresh picked mushrooms was one of the meals we used to make back home in Slovakia and is very common in Canada as well.  Yet, I have to say, it was never my favorite and thinking about eggs today makes it even less desirable. On the other hand scrambled tofu is one of my favorite things to eat and making it with Shiitake mushrooms makes it even more pleasing. Likewise, the scrambled tofu is truly versatile; you can always add more veggies for example, to it or just have them on the side, grilled, steamed or fresh. I love to eat it with my Guru Salad (kale) and whole grain organic bread or roast potatoes. Really, there're many choices you can experiment with, so be creative. Inventiveness and creativity is what I love about vegan lifestyle the most. The possibilities of creating new plant based meals good for your body, mind and soul, the animals and the planet are endless.   

Tofu Delicates Recipe

Prep time: 10min  Cooking time 15min  Total 25min

Serves 4

Ingredients

 

 

Tofu organic medium firm 2 x 350g (I use Soyganic)

Hickory Smoke Liquid aprox.1tsp  (I use Encore Woodland)

Hungarian red paprika 1tsp heap

Garlic powder or dry minced 1tsp to taste

Bragg liquid aminos Â¼ cup

Turmeric 1tsp heap

Cayenne pepper to taste

Black pepper to taste

Oil

Shiitake Mushrooms 2 cups sliced without the stems (you can aslo use bell peppers instead )

Scallions sliced for garnish 

 

 

Process

 

 

Begin with sautéing the Shiitake mushrooms on high heat with a pinch of salt and black pepper for few minutes until they turn golden  

When ready, remove them from the frying pan

Next step is to make the scrabbled tofu

Break it down with your hands or a food processor; just make sure you don’t overdo it. Do your best to preserve the slightly course texture.

Heat up the oil in the frying pan, add the tofu and begin sautéing for a minute

When ready, add the Bragg sauce with garlic , smoke liquid and stir thoroughly

Add the turmeric, Hungarian paprika with pinch of Cayenne pepper and again stir thoroughly

At last add the Shiitake and stir lightly

Garnish with Scallions
