Smoky garbanzo with sweet mashed potatoes, raw veggies and tahini dressing. Super healthy, delicious and easy to make. Garbanzo beans are highly nutritious, cost effective and very tasty. I really love them so I have few different ways of preparing them. You may check my other recipes if you like them as much as I do.

Rainbow Buddha Bowl

INGREDIENTS for 2
• Garbanzo 1 can, rinsed
• Turmeric powder 1tsp
• Hungarian paprika powder 1tbs
• Garlic powder to taste
• Cayenne pepper to taste
• Black pepper to taste
• Smoke liquid few drops
• Apple cider vinegar 1tbs
• Himalayan Pink salt to taste
• Oil 1tbs
Sauté garbanzo on oil with spices for few minutes,
Add 2tbs of water if needed and take it off the heat.
SWEET MASHED POTATOES
• Sweet potatoes 2 peeled and cut into cubes
• Shallot onion 2 (cut into quarters)
• Garlic 4 cloves whole
• Himalayan Pink salt to taste
• Black pepper to taste
PROCESS
• Preheat the oven to 400F.
• Place the sweet potatoes with onion and garlic into a Casserole dish.
• Add salt, pepper, few drops of oil and ½ a cup of water.
• Cover with lid and roast for 30 to 40min until soft.
• Take it out of the oven and let it cool down for 15min.
• When ready, blend all in a blender until smooth.
DRESSING
• Tahini ¼ cup
• Vegenaise ¼ cup
• Juice from 1 lemon
• Garlic powder to taste
• Himalayan Pink Salt to taste
• You may add some water if need it
Mix everything thoroughly with a whisk.
Serve with your favorite veggies. I love the combination of romaine lettuce, cubanelle pepper, red bell pepper, shredded carrot, cucumber, tomato, scallions and red onion.
