Buddha Bowl with Grilled Tofu, Veggies & Avocado Dressing

Having Buddha bowl for lunch will make you happy and fully satisfied. That’s why I decided to call this one Happy Buddha Bowl. The ingredients are only for one portion, because I was home alone lol. Nevertheless, it is easy to multiply for as many portions as you need. The dressing may be for two, it depends how big your avocado is. My was quite small so it was just enough for one portion, but I added more salad as well. It was truly delicious and I have no doubt you will love it. Keep in mind this is not only very appetizing meal, but also highly nutritious.

INGREDIENTS
Cooked rice of your choice 1cup (I am using Basmati)
Organic Firm Tofu 175gr (half of the package, cut into cubes)
Romaine Lettuce finely cut 1cup
Red Cabbage shredded 1cup
Turnip spiralized or shredded to garnish
Scallions sliced to garnish
Low sodium Tamari 1tbs
Crashed peanuts to garnish
Black sesame seeds 1tsp
Garlic powder to taste
Maple Syrup 1tbs
Apple Cider vinegar 1 tsp (or rice vinegar)
Oil 1tbs

PROCESS
Start sautéing the tofu in your skillet on hot oil.
Add the Tamari, lower the heat and turn it over couple of times with spatula until golden.
Add the maple syrup with vinegar and turn it over couple of times again.
Add the garlic powder with sesame seeds, turn it over one more time and take it off the heat.

FOR THE DRESSING
Avocado ½
Juice from 1 lemon (you may add more if needed)
Maple syrup ¼ cup
Himalayan Pink Salt to taste
Garlic powder
Dry chilli flakes (optional)
Water 2tbs (you may add more if need it)
Blend everything in a blender
When ready, arrange your bowl and apply the dressing on top.
