Quinoa Crust Pizza with Veggies & Cashew Dressing

I never made pizza from scratch before and this one is far from authentic, however, it is all that much healthier. Free from wheat and dairy, high in protein and fiber, besides other nutrients. Not to forget, super easy to make. You can always add Daiya cheese if you prefer, I am sure it would be delicious. Maybe next time I try it myself. There are many different toppings you can choose as well, anything goes, as long is plant based. For example olives would be one of the toppings I love on pizza and also spinach and arugula. So whatever you choose will be yummy and I bet you will love it. Also keep in mind that even though this pizza is very light, it is also very satisfying and will keep you full for a long time.

Summer Pizza

INGREDIENTS
Quinoa 1 cup (follow the cooking instructions on the package)
Chickpeas 1 ½ cup (canned)
Rice flour ¼ cup (flour of your choice)
Flaxseed meal ¼ cup
Apple cider vinegar 1tbs
Baking powder ½ tsp
Himalayan pink salt to taste
Olive oil
Water1/2 cup (you may add more if needed)
2 medium pie pans
Parchment paper
Food processor

DRESSING
Cashews ¼ cup (presoaked for 6 hours and drained)
Juice from one lemon
Garlic powder to taste
Nutritional yeast 1tbs
Himalayan Pink Salt to taste
Water ¼ cup (or more if needed)
Blend all in a blender until smooth

PROCESS
In a food processor, gradually blend all the ingredients by pressing the pulse button and full speed after you add the last ingredient.
Preheat the oven to 400F.
Divide the dough in two portions and place them in the middle of your pie pan lined with parchment paper. However, you can also use square shape pan if you like.
Keep pressing until is all even as much as possible.
Brush each with olive oil and place them into oven for 30min.
When ready, set the oven to broil and bake them for 7 more minutes. You may brush them with oil again.
When ready, add your favorite toppings and bake for another 15 minutes.
