SLOPPY TACOS
Tacos with roasted Garbanzo, Quinoa & Cheezey Dressing without the cheese

Sloppy Tacos is a perfect name for this recipe, because as much they are appetizing, they are messy lol. So make sure when you eating them, you are sitting at the table and no walking around. I know life is busy and we prefer food that we can eat on the go, but we should always eat at the table and enjoy our meal. It is actually very bad and unhealthy habit to eat on the go, so with meals like this one we are forced to sit down and focus on our food instead of multitasking. If you can’t do it during a day, then at least do yourself a favour and have a nice relaxing diner. The other plus side is that they are very easy to make and they don’t require any major preparation. This way you will have enough time left to do everything else after.
Sloppy Tacos

INGREDIENTS
Garbanzo 1 can 15oz, rinsed (about 2 cups)
Tortillas or tacos of your choice 6
Quinoa 1 cup (follow the cooking instructions on the package)
Chili powder 2tsp
Cumin powder 2tsp
Garlic powder1tsp
Black pepper to taste
Chilli pepper flakes optional
Smoke liquid
Red onion
Himalayan pink salt to taste
Olive oil
Lettuce and veggies of your choice
Cilantro
Baking sheet
Parchment paper

DRESSING
Tahini ¼ cup
Apple Cider vinegar 1 tbs
Garlic powder to taste
Nutritional yeast 1tbs
Mustard 1 tbs
Sriracha sauce 1 tsp
Himalayan Pink Salt to taste
Water ¼ cup (or more if needed)
Blend all thoroughly in a bowl with a whisk

PROCESS
Preheat the oven to 450F
In a bowl, toss the garbanzo with all the spices, salt, smoke liquid and 1 tbs of olive oil
Spread them on a baking sheet lined with parchment paper
Roast them for 30 to 40min until crunchy
When ready, mix them with quinoa and cilantro leaves and 1tbs of oil
Fill your tacos, top with veggies, dressing & serve
