GREEN PATTIES
Oven baked quinoa, green pea veggie patties

I guess I am obsessed with quinoa lol, but I can’t help it. This highly nutritious superfood is so versatile and easy to work with. I am truly amazed and I love it. You have to try these crispy on the outside and soft on the inside patties, they are so yummy and easy to make. You can have them in sandwich, wrap or include them in your Buddha Bowl, the way I did. I have few tahini and cashew dressing recipes on my blog, so check them out and see which one you like the most. They all go well.
Green Patties

INGREDIENTS
Quinoa 1 cup (follow the cooking instructions on the package)
Green peas 1 ½ cup (frozen)
Onion 1 medium size (cut into 4 quarters)
Garlic 4 cloves
Rice flour ¼ cup (flour of your choice)
Flaxseed meal ¼ cup
Juice from 1 lemon
Baking powder ½ tsp
Cumin powder 1tbs
Cilantro 1 cup diced (only the leaves)
Himalayan pink salt to taste
Black pepper to taste
Olive oil
Baking sheet
Parchment paper
Food processor

DRESSING
Tahini ¼ cup
Apple Cider vinegar 1 tbs
Garlic powder to taste
Nutritional yeast 1tbs
Mustard 1 tbs
Himalayan Pink Salt to taste
Water ¼ cup (or more if needed)
Blend all thoroughly in a bowl with a whisk

PROCESS
Mix the cooked hot quinoa with the frozen peas and set aside to let the peas to defrost.
In a food processor, gradually blend all the ingredients except cilantro starting with the onion by pressing the pulse button and full speed after you add the last ingredient.
In a bowl, mix the blend with cilantro/
Preheat the oven to 400F and begin to form patties.
For each patty measure ¼ cup of the mixture and make a ball with your hands.
Place them gradually on the baking sheet lined with parchment paper.
Press down each ball to form a patty.
Brush each patty with olive oil and pace them into oven for 30min.
When ready, set the oven to broil and bake them for 7 more minutes. You may brush them with oil again.
Serve with veggies of your choice.
