Curry Cauliflower with Potatoes & Green Peas

An awesome addition to Curry Lentil is Curry Cauliflower mixed with potatoes and green peas. Curry Lentil without it is just not complete. It is great for big family gatherings, because it makes a large amount food. One whole cauliflower gives you the base for about 10 portions. Of course, you can use only half of cauliflower and two potatoes or you can skip the potatoes if you prefer low carb and no starch. So it is really up to your preference and lifestyle. The taste will remain equally pleasing which you can also adjust to your taste. You can make it very spicy or not spicy at all. If you have young children then you may choose no spicy at all, however, you may divide it in two halves and make one spicy and the other half not spicy.

Ingredients

Potatoes 2 large or 4 small (boiled one day before, peeled and diced in to small cubes)
Cauliflower, 1/2 (cut in to small pieces, only florets slightly steamed)
Green peas 1 cup frozen
Curry spice 1tbs heaped
Chilli peppers (optional)
Onion (diced)
Garlic 4 cloves (minced)
Cilantro ¼ cup (chopped)
Oil
Himalayan Pink Salt to taste
Process
Start with sautéing ½ of onion and 2 cloves of diced garlic
Add potatoes and sauté un till it turns golden
When ready, add 1/2tbs of curry spice and salt
Mix thoroughly and tadd 1/2 cup of green peas
Stir again and leave on the mild heat for 5 more minutes until the green peas warms up
Take it off the heat
On another pan start sautéing the second half of the onion and garlic for couple of minutes
Add the cauliflower and sauté on high heat until it turns golden, but make sure you don’t over cook
When ready, add 1/2tbs of curry spice and the rest of the green peas at the end and mix thoroughly. Leave on the heat for few minutes until the green peas warm up.
At the end, mix the cauliflower and potatoes in the larger pan and garnish with cilantro.

I also had some hot cherry peppers from my neighbour's garden, so I used them to garnish , because they are very pretty. I added only little bit to the dish., since they are very hot hot hot.
