Creamy Spread without the Cream

They are actually two ways you can make this yummy spread. I know Cashews can be quite pricy, so I tried to make it with tofu as well and it was equality delicious. The recipe is pretty much the same, except you will need 350gr of organic firm tofu instead of cashews. There is no need to presoak the tofu, you just cut it into four quarters and blend it in a food processor the way you would the cashews. Always start with the pulse button and then give it a good spin at the end. Add the chives or scallions and there you have it! It cannot be any easier, yet super delicious, high in protein and low in carbs spread for the whole family.

INGREDIENTS
Raw cashews 1 cup (presoaked for 6 hours and rinsed))
Organic mustard 1tbs (or mustard of your choice)
Scallions or chives 1/2 cup ( finely chopped )
Garlic 2 cloves minced or 1 tsp garlic powder
Juice from 1 lemon
Himalayan pink salt to taste
Black pepper to taste
¼ cup water

PROCESS
Blend all the ingredients in a food processor, except the chives.
When ready, mix it all together in a bowl.

Serve with bread or crackers and veggies of your choice.
